Case Study: Scaling Success at Tsarina Wine

Tsarina Wine is a serious estate. Its cellar runs at industrial scale, but its winemaking discipline is artisanal: every parcel is followed individually, every fermentation defended by hand. When the team agreed to deploy Scepter across nine fermenters, they were not buying convenience. They were stress-testing whether a closed-loop AI control plane could keep up with the precision they already demanded of themselves.

The deployment

Nine tanks. Nine in-tank IP68 sensors. One Intelligent Controller per cluster, governing the cooling solenoids autonomously. Every reading streamed to the cellar console, every decision logged for the season's vintage book. The platform absorbed the cellar's existing fermentation profiles and replayed them, vintage after vintage, with the same temperature ramp and the same hold tolerances.

What changed inside the cellar

• Manual cooling cycles dropped to zero — the controller now opens and closes solenoids on its own.
• Stuck-fermentation risk surfaces 48–72 hours before symptoms become visible in the lab.
• Style replication across vintages became a configuration choice, not a question of staffing.
• The night shift reclaimed its sleep — and so did the chief winemaker.

The recognition

Supported by Scepter, Tsarina Wine's White Swallow secured the coveted title of Best White Wine at Vinaria 2021 — the most influential wine competition on the Bulgarian calendar. We did not make the wine. We defended it through the most fragile fortnight of its life.
